A vegan lasagne keeps everything that makes lasagne work — the pasta, the tomato, the layers and the golden top — and builds it entirely from plants: a plant protein where the mince would be, a soy béchamel and a plant-based cheese. Ours layers a TVP bolognese with durum wheat pasta sheets and soy béchamel, finishes it with vegan cheese and bakes it in the tray. Because it is plant-based all the way through, it is a vegetarian lasagne as well.

What goes in a vegan lasagne instead of meat?
In ours, TVP — textured vegetable protein — the same base as our bolognese. It browns and crumbles like mince and holds its texture through the simmer with crushed tomato, tomato paste, onion, garlic, soy sauce and mixed Italian herbs. Lentils and mushrooms are the usual home alternatives, but lentils go soft and mushrooms water out, which is why we use TVP.
How ours is built, layer by layer
One tray is cut into 15 portions. This is what goes into it:

Each portion weighs about 340 g and works out at 30.2g of plant protein and 356 calories. The bolognese does most of the work: about four-fifths of every portion by weight.
Making a vegan lasagne at home
At home, the same four components come together like this:
- Soak the TVP in hot water until soft, then simmer it with softened onion and garlic, crushed tomato, tomato paste, a splash of soy sauce and dried Italian herbs until thick.
- For the béchamel, warm olive oil in a pot, whisk in plain flour, then pour in the soy milk all at once and keep whisking until it boils and thickens. Season it off the heat — it keeps thickening as it cools.
- Layer bolognese and pasta sheets three times over, spread the béchamel across the top (or between the layers, if you like it creamier) and scatter over shredded vegan cheese.
- Bake in a moderate oven, about 180°C, until the top is golden and the edges bubble, then rest it before cutting so the layers hold.

Is vegan lasagne the same as vegetarian lasagne?
Not quite. A vegetarian lasagne leaves out the meat but often keeps ricotta, mozzarella, parmesan and a dairy béchamel. A vegan lasagne is plant-based all the way through, so it suits vegetarians and vegans alike — an easy pick for a household where not everyone eats the same way. Is your vegan lasagne vegetarian?
Yes. It is fully plant-based — TVP bolognese, soy béchamel, durum wheat pasta sheets and vegan cheese — so it suits vegetarians as well as vegans.
What cheese is on a vegan lasagne?
Ours is finished with a shredded vegan cheese that melts and browns in the oven. The béchamel under it is made with soy milk.
How do I heat it?
Pierce the film and microwave for 3 minutes until it is hot all the way through, then let it stand for a minute.
What allergens are in it?
It contains wheat (gluten) and soy, and the pasta maker notes its sheets may contain egg. Our kitchen also handles peanuts, sesame and other allergens, and cross-contamination cannot be excluded — check the ingredient list on the product page if you have a food allergy.
