What is toum?
Toum is a Lebanese garlic sauce made by whipping garlic with oil, lemon juice and salt until it turns thick, white and fluffy. The garlic holds the oil in an emulsion on its own, so the traditional recipe needs no egg — the thing that separates it from an aioli made with egg yolk. It is the sauce served with shawarma and falafel, and it is strong: a little goes a long way.
Is toum vegan?
Yes — toum is made from garlic, lemon juice, oil and salt, so it is a vegan sauce, and ours is no exception. Our ingredient list is garlic, freshly squeezed lemon juice, cold-pressed Australian canola oil and pink salt, and like everything on our menu it is 100% plant-based.
The lemon juice matters: ours is freshly squeezed, not citric acid, and you can taste the difference — real lemon is rounder and less metallic. If you have a food allergy, note that our kitchen handles peanuts, soy, wheat gluten, sesame and other allergens, and cross-contamination cannot be excluded.
What to eat it with
Anything that benefits from garlic, which is most things. On the menu: spread it through the shawarma, dollop it beside the falafel, or stir it into the loubieh. Off the menu: it works as a marinade, on roast vegetables, and on toast at hours you won't admit to.
