Garlic, freshly squeezed lemon juice, cold-pressed Australian canola oil and pink salt. The lemon juice matters: plenty of commercial toum leans on citric acid instead, and you can taste the difference — real lemon is rounder and less metallic.
What to eat it with
Anything that benefits from garlic, which is most things. On the menu: spread it through the shawarma, dollop it beside the falafel, or stir it into the loubieh. Off the menu: it works as a marinade, on roast vegetables, and on toast at hours you won't admit to.
Storage
Keep it chilled and eat it cold — the tub has a re-usable lid, and 500g is enough to develop opinions about.
